Ingredients of ROASTED PEAS WITH SUN DRIED TOMATOES & MOZZARELLA
- 🢂 1/2 of onion (finely chopped).
- 🢂 6 cups of Green Peas.
- 🢂 1/2 cup of Sun dried Tomatoes chopped.
- 🢂 1/2 tbsp of Tomato Paste.
- 🢂 1/2 cup of Grape/Cherry Tomatoes.
- 🢂 1 tbsp of Oregano.
- 🢂 1 cup of Mini Mozzarella Balls.
- 🢂 1/3 cup of Extra Virgin Olive Oil.
- 🢂 3 tbsp of Sun Dried Tomatoes Oil.
Heat a pan and add the coconut oil. Then add onions and salt and simmer over low heat until the onions are soft without being burned. Once ready, add garlic powder, dried tomatoes, and ginger. A hearty salad of chickpeas roasted with cumin and paprika until dense and nutty, combined with kale, fresh herbs, pine nuts, and sun-dried tomatoes.

- Pre heat oven to 180.
- Saute chopped onion for a few minutes..
- Add in all the ingredients and continue to stir for 10 minutes..
- Add in 3 tablespoons from the Sun Dried Tomatoes..
- Add the mixture into a baking pan and top with Mini Mozzarella Balls.
- Bake for 15 minutes or until cheese has melted. S.
This is a salad that gets even better on the second day. Note: Salad can be made and stored in the refrigerator for up to three days in advance. Smash the chickpeas and add the parsley, extra virgin olive oil, sun dried tomatoes, lemon juice, salt and pepper. It did get soupy at the bottom of the bowl, so drain those tomatoes well (paper towels work nicely) and go easy on the olive oil. Lemon / Sun dried tomato recipes is the theme of the week!
