Saffron Rice The saffron should always be steeped in hot water ahead of time and used as part of the liquid in the recipe. The following is a recipe prepared in the Indian manner. Saffron brings not only its signature flavor to this dish but also provides it's signature yellow color to the rice. You can cook Saffron Rice using 7 ingredients and 5 steps. Here is how you achieve it.

Ingredients of Saffron Rice

  1. 🢂 1 of orange bell pepper.
  2. 🢂 1 handful of dried barberries (or dried cranberries).
  3. 🢂 1 cup of rice, uncooked.
  4. 🢂 1 pinch of saffron threads.
  5. 🢂 2 cups of water.
  6. 🢂 to taste of seasoning.
  7. 🢂 of olives (optional).

Because saffron is so expensive, this recipe calls for just a small amount; the color is then enhanced by adding turmeric. Not only does that spice have incredible health benefits (in Thailand, turmeric is known as "poor man's saffron"), but also turns the rice a vibrant yellow. If any liquid remains, drain it. The rice becomes rich with saffron flavor and aroma.

instructions Saffron Rice

  1. Slice the pepper as thinly or as roughly as you like. Fry in a tablespoon of oil in a pot over medium high heat.
  2. As soon as it becomes fragrant (5 min), add washed barberries. Stir.
  3. Next, add saffron (I added quite a generous pinch) and rice. Stir everything.
  4. Lower the heat then add water. Stir until most of the liquid is absorbed (15 min), then take off heat and cover with a lid for about 10 minutes.
  5. Taste and season to your liking. Serve with olives if desired. Enjoy :).

I say invest, because saffron can be very pricey. You only use a small amount, but you also get a very small amount in most bottles. This is a great rice recipe when plain basmati rice just won't do. The saffron adds such a lovely, bright golden color to the rice, in contrast with the crimson saffron threads dispersed throughout. Saffron rice has a delicate, floral aroma that you can't duplicate with any other spice.
